Some of you may know, some of you may not – I used to have a whole different food blog. (If you know, welcome, OGs!) That was back in another life. Long, long ago. It was super cool and there are still lots of awesome recipes on it. But when I went through some major life changes a couple of years ago, I knew I eventually wanted to build a new blog that was a better fit.

With recipes just like this one. Something you can make when you come home to a frustratingly mixed up fridge and your energy is on 15%. Something that keeps the mess to a minimum, but fills your belly and tastes amazing.

That’s exactly what these baked chicken taquitos are, so let’s talk about how we’re gonna make ’em.

How to Make Easy Baked Chicken Taquitos

  1. Season your chicken breasts and cook them up on the stovetop. Orrrrr… take a shortcut and use already cooked rotisserie chicken.
  2. Add simmer sauce. Scroll to see the super difficult recipe for the sauce. *insert sarcasm*
  3. Warm tortillas until pliable and them spritz them with cooking spray. Scoop your saucy chicken into them add cheese, and roll. Place on a baking sheet.
  4. Bake 10-12 minutes until they’re golden brown. Devour!

Ummm… yes. It’s seriously that easy. 4 simple little steps to happy food dance dinner goals. Dip ’em in guac. Dip ’em in salsa. Dip ’em in more of the simmer sauce. And smash these crunchy little taquitos.

  • 1 lb. Chicken Breasts
  • 1 jar Simmer Sauce See notes
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 8 count Small Corn Tortillas
  • Shredded Mexican Cheese
  • Cooking Spray

Instructions

Notes

I usually find a simmer sauce at one of my local grocery stores. You can often find these in the ethnic or Hispanic section. Here’s one of my favorites from Kroger.
