I’m sure most of you can relate. So what we have here are delicious, handheld egg muffins that are packed with protein and flavor!

I’m pretty picky when it comes to make ahead egg recipes, so you have to trust me when I tell you – these will make a believer out of you.

I’ve tested these egg muffins sooooo many times and with so many different variations. I can confidently say – this is THE egg muffin cup recipe you want. They’re dense and fluffy, with the perfect ratio of sausage and cheese folded into the mix. They don’t dry out and they’re just as good reheated as they are fresh out of the muffin pan.

Here’s where easy meets yum – we’re dirtying a total of two dishes for a week’s worth of breakfast.

How to Make Sausage Egg Breakfast Muffins

  1. Brown the sausage.
  2. Crack the eggs.
  3. Add seasonings, cheese, and mix. 
  4. Fill the muffin trays.
  5. Bake. 

That’s it. Seriously. 5 steps and 30 minutes = breakfast for the whole week. I mean, come on. You can’t beat that.

Sausage Egg Muffin Cups

This is the egg muffin recipe you have been searching for. Perfectly dense and fluffy, loaded with sausage and cheese. Easy prep ahead breakfast!
Prep Time 5 minutes
Cook Time 25 minutes

Servings 12 muffin cups

Ingredients
  

  • 8 eggs
  • 1 cup shredded cheese I like Mexican blend
  • 1/2 lb. cooked ground sausage
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • olive oil cooking spray if you're not using a silicone muffin tray

Instructions
 

  • Preheat oven to 375º. Brown sausage and drain excess fat. Set aside.
  • Crack eggs into a pitcher or a large measuring bowl (preferably with a spout for easy pouring.)
  • Add cheese, salt, and pepper. Use an immersion blender or whisk to thoroughly combine.
  • Scoop about 2 Tablespoons of sausage into each muffin cup. Pour egg mixture in until almost full.
  • Bake muffin cups for 25-30 minutes, until egg is fully set and not jiggly. The tops should be lightly browned. Enjoy immediately or allow to cool and store in the fridge.

Notes

You can add veggies to these if you like! I've added tomatoes, asparagus, onion, mushrooms, and peppers. I just keep the veggie toppings to 1-2 Tablespoons so they don't overflow.
