Easy Baked Chicken Taquitos

This recipe for easy baked chicken taquitos is about to become a new weeknight staple. These come together in under 30 minutes for a simple dinner and they can be frozen and reheated when you're in a pinch.

Ingredients
  

  • 1 lb. Chicken Breasts
  • 1 jar Simmer Sauce See notes
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 8 count Small Corn Tortillas
  • Shredded Mexican Cheese
  • Cooking Spray

Instructions
 

  • Season your chicken breasts and cook them up on the stovetop. Orrrrr... take a shortcut and use already cooked rotisserie chicken.
  • Add simmer sauce. Scroll to see the super difficult recipe for the sauce. *insert sarcasm*
  • Warm tortillas until pliable and them spritz them with cooking spray. Scoop your saucy chicken into them add cheese, and roll. Place on a baking sheet.
  • Bake 10-12 minutes until they're golden brown. Devour!

Notes

I usually find a simmer sauce at one of my local grocery stores. You can often find these in the ethnic or Hispanic section. Here's one of my favorites from Kroger.
