It’s summer. As in, officially summer. That means it’s time for mind-blowingly easy meals that we can eat on the patio like this summer vegetable pasta salad. With sweet corn, crispy zucchini, and juicy garden tomatoes. Also important to note: FETA. Lots of feta. This is basically a midwest-meets-Greek pasta salad and it’s checking all of our easy summer meal boxes.

I don’t care what anyone says, when it comes to summer food – pasta salad reigns supreme. It can be lunch after yard work. It can be a midday snack. It can be dinner all by itself with a glass of white wine. It can be the superstar side dish at any cookout. Pasta salad makes summer dreams come true – especially when it’s as easy as this one. I mean… can we talk about the ingredients list?

Ingredients for this Summer Vegetable Pasta Salad recipe:

  • fun-shaped pasta noodles
  • cherry tomatoes (extra cool points if you grew your own this year)
  • sweet corn
  • zucchini half moons (more bonus points if you grill your zucchini)
  • arugula
  • roasted chicken breasts
  • feta
  • salt & pepper

So there you have it. The easiest, most crowd-pleasing summer side dish you’ll make this year. With alllllll of the favorite characters. Pasta, salty feta, and fat, juicy ‘maters. Fair warning, you will most definitely catch me sneaking a bowl of this while I’m waiting on the burgers to finish up.

Ingredients
  

  • 3 cups Pasta
  • Water for boiling
  • 1/4 cup Olive Oil, divided
  • 1/2 lb. Chicken, shredded
  • 1 cup Zucchini, chopped into half moons
  • 1 cup Sweet Corn
  • 1 cup Cherry Tomatoes, halved
  • 1 1/2 cups Arugula
  • 5 oz. Feta Cheese
  • 2 tbps Basil, finely chopped
  • 1/2 cup Lemon Juice
  • 1/2 tsps Sea Salt
  • 1 tsps Black Pepper

Instructions
 

  • Cook pasta until al dente, drain, and allow to cool. 
  • While the pasta is cooking, you can prepare the veggies. Combine the veggies, chicken, and feta in a large bowl and mix. Once its cooled, add the pasta and mix again.
  • In a small bowl or mason jar, combine lemon juice, olive oil, salt, and pepper. Pour the dressing over the pasta and veggies and mix to coat thoroughly.
  • Serve and enjoy!
