Instant Pot Salsa Chicken Meal Prep
This Instant Pot salsa chicken recipe makes for quick and easy meal prep. Lots of protein, healthy carbs, and tons of flavor.

- 1 lb. chicken breasts
- 1 cup chicken broth
- 1 Tablespoon olive oil
- 14 ounces of salsa verde or regular salsa
- 1 packet taco seasoning I like Siete brand
- 1/2 teaspoon salt
- 1 can black beans
- cheese I love cotija, but regular Mexican shredded blend works!
- cilantro
Add olive oil to the bottom of your instant pot. Add water, rice, salsa, salt, and half of the taco seasoning. Stir to combine.
Cut your chicken breasts into 6-8 even pieces. Then season with the remaining taco seasoning. with your favorite spices and some salt. Place the chicken on top of the ingredients in the instant pot.
Turn the instant pot on high pressure for 7 minutes. When it beeps, use the quick release valve for the steam.
Remove and chop or shred the chicken. Drain the black beans and mix them into the instant pot.
Portion into meal prep containers or bowls if you're having this for dinner! Top with cheese, cilantro, lime, avocado, etc!
